The job of the mondadoras (saffron plucker) with the La Mancha’s saffron. Montilla del Palancar. Cuenca. Spain

A group of silver-haired señoras sit, chatting around a table piled high with purple crocuses. With fingertips whirring and bracelets jangling, they reach for blossom after blossom—15 per minute, on average—working against the clock to pinch out the flowers’ crimson stigmas that, when dried, will become the most elusive, expensive spice on earth: saffron.
