口子窖发酵池:
传统的酿制口子窖过程中,发酵是非常重要环节,除了挑选淮北平原的上等纯粮,拌入独有的“红心酒曲”外,最后起决定作用的就是被口子人视为圣地的古窖池了。
口子的窖池建于明末清初,老窖的酵泥湿润肥沃,适宜多菌群发酵。口子人以此发展出独特的酵泥培养方法,甚为复杂严谨:首先是对几百年老窖中的泥土进行化验分析,找出其中有益菌株后进行反复的摸索、试验,然后用80度的水浸透所用的老城花土,消除杂菌,再用古泉井水与15度酒尾混合液泼入浸过的老城花土中,之后将所有原料逐一加入翻拌,用大草席盖严,把温度控制在32~35摄氏度之间,最后坚持发酵120天才算大功告成。
