Doka Estate is a Costa Rican coffee plantation and roaster that has been in business for more than 70 years. They pride themselves on producing some of Costa Rica’s highest quality coffee. They also go to great lengths to accommodate tourists. In this pavilion workers prepare for the arrival of tourists who will be treated to a demonstration of how sugar cane was processed back in the colonial period. The water wheel powers a cane crusher. The extracted juice can be fermented into a drink and tasted by the visitors or it can be boiled down to brown sugar and poured into molds to solidify as candy. The workers at the evaporation cauldrons are mixing the sugar before pouring it into the molds on the table. After this demonstration, tourists head uphill to see the coffee processing and roasting facility and to taste the fine Costa Rican coffee produced here.
